Caribbean hotel/resorts have always been challenging from a beverage cost control perspective. And Hilton Aruba was well aware of the profit improvement opportunity in their primary bar venues serving guests across the day. Each market situation is different, but labor costs and inventory costs often vary dramatically versus peer resort properties in the United States. Longer stay rates and high cocktail product mix factors also create a higher probability for pouring control issues to be happening in the bars.
Following an SBS Assessment Hilton Aruba decided to move forward with a Beverage Control solution. They had tried another similar product several years ago, but the lack of POS integration with the pour monitoring technology made the resulting data unusable from a behavior change perspective. SBS gave them that integration and it made all the difference in the ability to go to the team to challenge over pouring on everything including the crazy cocktails and frozen drinks. But in this situation the biggest business impact turned out to be unaccounted for pours – effectively lost revenue when a drink would get poured and not sold.
